National Lemon Cupcake Day

Origin of National Lemon Cupcake Day:
Our extensive search failed to discover any factual content on this very special day.
There was some reference to this as a "National Day". Someone must have decided that all food related holidays should be called "National" days. However, we found no congressional records or presidential proclamation.
While yellow or chocolate cupcakes grab all the glory, lemon cupcakes are a refreshing surprise at Holiday parties, potlucks, and bake sales alike. And while they may not be standard Christmas fare, lemon cupcakes will be a hit item at your annual gathering. You can tell your cohorts that you made them in recognition of National Lemon Cupcake Day!

    To make 24 Lemon Coconut Cupcakes:

    1 18.25 box white cake mix (recommended: Betty Crocker Super Moist White Cake Mix)

    2 fresh lemons, washed and dried

    1/3 cup vegetable oil

    3 egg whites

    1 teaspoon vanilla

    12 ounces (1 & 1/2 cups) shredded coconut

    Lemon Coconut Frosting (recipe below)

    Preheat oven to 350 degrees.
    Line muffin pan with paper cupcake/muffin liners. Pour the white cake mix into a large mixing bowl.
    Zest the yellow part of the lemon peel and add to cake mix in bowl.
    Squeeze the juice from the lemons into a measuring cup then add enough water to the measuring cup to equal 1 & 1/4 cups total of lemon juice and water. Add to the cake mix.
    Add the vegetable oil, egg whites and vanilla to the cake mix.
    Beat on low speed for 30 seconds then increase mixer speed to medium and beat for 2 minutes.
    Stir in shredded coconut.
    Distribute batter evenly into prepared cupcake pan and bake in pre-heated oven for 20 - 25 minutes until tester comes out clean when inserted into the center of the cupcake.
    Remove pan from oven and let cupcakes cool completely before frosting.
    Lemon Coconut Frosting

    1 8-oz packages cream cheese, softened to room temperature

    1/2 cup (1 stick) butter, softened to room temperature

    1 teaspoon vanilla

    2 fresh lemons, washed and dried

    6 - 7 cups powdered sugar

    1 cup shredded coconut

    In a large mixing bowl, beat together the softened cream cheese and butter until smooth and creamy.
    Beat in the vanilla.
    Zest the yellow part of the lemon peel from the lemons and add to cream cheese/butter mixture.
    Squeeze enough juice from the lemons (minus any seeds) into a measuring cup to equal 1/4 cup juice. Add to the cream cheese/butter mixture and beat for another minute to incorporate the zest and juice.
    Reduce the mixer speed to low and add the powdered sugar, about 1 cup at a time, to the cream cheese/butter/lemon mixture. Beat well after each addition. Add powdered sugar until desired frosting consistency is achieved. (If you add too much powdered sugar, you can thin it out with a few drops of milk. If you add too much milk, don’t panic - just add a little more powdered sugar.)
    Spread the frosting on completely cooled cupcakes.
    Gently press shredded coconut on top of the frosting so that it sticks to the top of the cupcakes.
    If desired, garnish tops of cupcakes with additional lemon zest.

  3. Is today really National Lemon Cupcake Day? Darn! Too bad I didn't wear anything lemon yellow colored today. Welp, I guess my celebration will commence when I get home. That means I can try out a new recipe I found for Lemon Meringue Cupcakes! O joy!
    I wonder how many different lemon cupcakes and lemon cake variations there are in the world. See, that is the wonder of food, you can experiment all day until you find something that satisfies your taste buds. How are you going to show your devotion to all these lemony for National Lemon Cupcake Day?!?

  4. Today is Bill of Rights Day. To Americans, the Bill of Rights are key amendments to the U.S. Constitution, that protect our individual rights.


    On March 4, 1789, the Constitution of the United States of America was ratified by the (former)13 colonies, and went into effect. States and individuals were concerned that the Constitution did not properly cover and protect a number of rights of individuals. The Constitution was signed by the original 13 states with the requirement, or understanding, that a Bill of Rights would be created, amending the new U.S. Constitution.


    On September 25, 1789, the First Congress of the United States proposed to the state legislatures 12 amendments to the Constitution. 10 of these amendments were added to the Constitution on December 15, 1791.
